I came across a formula for making acid for disolving stone which I mentioned in previous posts. If you let soak a block of limestone you can literally scrape the softened stone away. Once you get it to the shape you like you can just soak an edge and then once softened flip it onto the top of another block. The softened stone forms itself to the other block leaving a very tight joint. I have tried it and it is pretty easy with limestone. I haven't found an acid that softens granite fast enough without plenty heat. I like the uneven joints in the walls in Peru because I think they actually help lock the stones together.

High pressure water jet saws could cut the blocks to the precision in those walls but again this technology didn't exist back then.
